The Southern Hills Cabernet Sauvignon is named after the vineyards situated along the southern hills of the Central Coast. The Wente family cultivates approximately 400 acres of Cabernet Sauvignon, using two clones that originated from the Bordeaux cuttings brought by California wine pioneer Charles Wetmore in the 19th century. The well-drained rocky soils and unique mesoclimates of the Southern Hills vineyards provide ideal conditions for growing Cabernet Sauvignon, resulting in wines with distinct character, depth, and intensity.

The various wine components were fermented separately in upright stainless-steel tanks with pneumatage twice a day to maximize the extraction of aromas and textures. Aged for 12 months in French, American and neutral oak barrels and stainless steel tanks. Stainless steel helps to add fruit vibrancy.

ON THE PALATE: The 2021 Wente Vineyards Southern Hills Cabernet Sauvignon is a classic example of approachable California Cabernet. It features clean and concise fruit flavors, showcasing fresh blackberry, cassis, and black cherry, supported by delightful oak-inspired notes of chocolate and a hint of fresh-baked gingerbread. This well-balanced and polished wine has integrated oak and an underlying structure, ensuring it will remain a fan favorite, drinking beautifully over the next three to five years.

FOOD PAIRING: This wine pairs beautifully with grilled New York steaks, winter stews, grilled hamburgers, and baked beans. It also complements a variety of pasta dishes, especially lasagna. For appetizers, consider aged white Irish cheddar, creamy brie on baguette, and salami slices.

BLEND: 87% Cabernet Sauvignon, 8% Petite Sirah, 3% Petit Verdot, and 2% Malbec.
